DOUBLE-CHOCOLATE FUDGE SQUARES
Preparation time: 15 minutes. Baking time: 30 to 35 minutes. Oven temperature: 325 degrees. Yields: 16 squares. 3/4 c. All-purpose flour
1/4 tsp. Baking soda
1/3 c. Butter or margarine
3/4 c. Granulated sugar
2 tbsp. Water
1 pkg. (12 oz.) semi-sweet chocolate
Pieces
1 tsp. Vanilla
2 eggs
1/2 c. Chopped walnuts or pecans
1. In small bowl, mix flour and baking soda. Set aside. 2. In small saucepan, combine butter, sugar and water. Bring just to a boil. Remove from heat. 3. Add 1 cup chocolate pieces and the vanilla. Stir until chocolate is melted and mixture is smooth. Transfer to a medium bowl. 4. Add eggs, 1 at a time, beating thoroughly after each addition. 5. Gradually add flour mixture, beating until smooth. 6. Stir in remaining chocolate pieces and the nuts. 7. Spread in greased 9-inch square baking pan. 8. Bake at 325 degrees for 30 to 35 minutes or until pick inserted near center comes out clean. 9. Cool completely on wire rack. Cut in 16 squares.
WALNUT CHOCOLATE FUDGE
3 c. Granulated sugar
1/2 c. Water
1/2 c. Apple juice
1 (12 oz.) pkg. Semi sweet chocolate
Pieces
2 c. Chopped walnuts
1. In a saucepan combine sugar, water, apple juice. Over medium heat cook and stir until sugar is dissolved. 2. Cook until syrup reaches soft ball stage. 3. Remove from heat. Whisk in chocolate. Blend well. Stir in walnuts. 4. Spread mixture in foil lined baking pan. Chill. 5. Turn fudge out of pan. Peel off foil. Cut into squares.
